El organismo se\u00f1ala que el abuso de este condimento en la dieta diaria es responsable del 30% de los casos de hipertensi\u00f3n en el planeta, cifra clave considerando que la presi\u00f3n arterial alta causa al menos el 40% de todas las enfermedades card\u00edacas y accidentes cerebrovasculares. Adem\u00e1s, la ingesta excesiva de sal se vincula con la osteoporosis y la insuficiencia renal, y se cree que incluso puede causar c\u00e1ncer de est\u00f3mago.<\/p>\n<p>Seg\u00fan cifras de la OMS, la hipertensi\u00f3n causa 9,4 millones de muertes al a\u00f1o en el mundo. De ah\u00ed que el organismo recomienda una ingesta no mayor de 5 gramos de sal o 2000 miligramos de sodio al d\u00eda para mantener un control adecuado de la presi\u00f3n arterial. Y a\u00f1ade que llevar una dieta baja en sal evitar\u00eda hasta uno de cada cuatro ataques al coraz\u00f3n o accidentes cerebrovasculares.<\/p>\n<p>Ante estos argumentos contundentes, la pregunta que surge es: \u00bfpor qu\u00e9 consumir sal si resulta tan perjudicial para la salud? De acuerdo con Valentina Fr\u00edas Llerena, nutricionista guayaquile\u00f1a, este condimento debe ingerirse de acuerdo con los par\u00e1metros y porciones sugeridos por la OMS \u201cya que es necesario para el correcto funcionamiento de nuestro organismo\u201d.<\/p>\n<p>Agrega que \u201cno se debe eliminar la sal completamente de las comidas ya que el sodio ayuda a la hidrataci\u00f3n, participa en multitud de intercambios celulares y contribuye al equilibrio de la composici\u00f3n de la sangre\u201d.<\/p>\n<p><strong>Edad: un factor a considerar<\/strong><\/p>\n<p>El consumo diario de sal var\u00eda en las distintas etapas de la vida, destaca Valentina Fr\u00edas.<\/p>\n<p>\u201cEn el caso de ni\u00f1os menores de 2 a\u00f1os se aconseja la alimentaci\u00f3n complementaria sin sal. Sin embargo, la recomendaci\u00f3n para la poblaci\u00f3n general mayor de 2 a\u00f1os es de menos de 5 gramos de sal al d\u00eda\u201d, expresa.<\/p>\n<p><strong>Ojo con los alimentos procesados<\/strong><\/p>\n<p>Muchas comidas y productos empaquetados de venta en el mercado tienen porcentajes muy altos de sal y de sodio. Hay que prestar especial atenci\u00f3n a estas cifras antes de hacer la compra.<\/p>\n<p>Lo mismo ocurre con los restaurantes: es mejor asegurarse de solicitar que preparen los alimentos con menos cantidad de sal de la que habitualmente utilizan y favorecer los platos hervidos o asados por sobre los fritos.<\/p>\n<p><strong>La sal \u201cinvisible\u201d<\/strong><\/p>\n<p>Otro importante factor a tener en cuenta es la sal que tienen de manera intr\u00ednseca los alimentos y la que se les agrega durante su procesamiento, de acuerdo con la doctora Susana del Prado D\u00edaz, del Servicio de Cardiolog\u00eda del Hospital Universitario La Paz de Madrid (Espa\u00f1a). Es lo que se conoce como sal \u201cinvisible\u201d.<\/p>\n<p>As\u00ed, esos 5 gramos equivalentes a una cucharadita de sal al d\u00eda que permite la OMS se incrementan gracias a esta sal \u201cinvisible\u201d, con los consecuentes perjuicios para la salud.<\/p>\n<p><strong>Alternativas para sazonar<\/strong><\/p>\n<p>Si bien no es conveniente eliminar por completo el uso de sal en la alimentaci\u00f3n, existen algunas alternativas que pueden suplantar a este condimento al igual que ocurre con los sustitutos del az\u00facar.<\/p>\n<p>\u201cPara condimentar los alimentos se puede utilizar sal rosada o sal baja en sodio. Tambi\u00e9n especias como la canela, clavo de olor, ajo, vinagre, pimienta o c\u00farcuma\u201d, dice Valentina Fr\u00edas. Asimismo, el jugo de lim\u00f3n, la cebolla, entre otros, ayudan a este fin.<\/p>\n<p><strong>Cifras de impacto<\/strong><\/p>\n<ul>\n<li>Si se observaran los par\u00e1metros de 5 gramos de sal al d\u00eda, la OMS calcula que alrededor del 30 % de las personas hipertensas podr\u00edan mantener sus cifras en niveles normales.<\/li>\n<li>Est\u00e1 comprobado que regirse por esa porci\u00f3n diaria de sal contribuye a evitar la aparici\u00f3n de la hipertensi\u00f3n con el paso de los a\u00f1os.<\/li>\n<li>Excederse con este condimento en el men\u00fa diario causa aproximadamente el 10 % de las enfermedades cardiovasculares y se lo asocia adem\u00e1s con el c\u00e1ncer de est\u00f3mago, agravamiento del asma, osteoporosis, c\u00e1lculos renales y
