Sin embargo, tambi\u00e9n una gran cantidad de personas que no presentan estas restricciones han adoptado este h\u00e1bito, quiz\u00e1s por moda o quiz\u00e1s por creer que as\u00ed su dieta diaria ser\u00e1 m\u00e1s saludable. Lo que ignoran es que esta pr\u00e1ctica a la larga puede tener consecuencias graves para la salud.<\/p>\n<p>Para entender mejor el contexto, partamos por el principio. \u00bfQu\u00e9 es el gluten? Es una prote\u00edna que se halla en el trigo, avena, centeno y cebada, y que contribuye a dar volumen a las masas, de ah\u00ed que suela incorpor\u00e1rselo a productos variados como pastas o cereales.<\/p>\n<p>Hay quienes desarrollan alergias o intolerancia a esta prote\u00edna y tambi\u00e9n quienes padecen de enfermedad cel\u00edaca, un cuadro autoinmune en el que el sistema inmunol\u00f3gico reacciona ante la presencia del gluten, sin ser una intolerancia, ni una alergia. La enfermedad cel\u00edaca se da en ni\u00f1os y adultos por igual, siendo el g\u00e9nero femenino el m\u00e1s afectado.<\/p>\n<p>Para saber si se sufre de alguno de estos cuadros hay que realizar ex\u00e1menes serol\u00f3gicos de sangre en los que se busca un anticuerpo espec\u00edfico, y tambi\u00e9n una biopsia del intestino delgado, explica la nutricionista guayaquile\u00f1a Valentina Fr\u00edas Llerena.<\/p>\n<p>La especialista se\u00f1ala que \u201cquienes tienen una enfermedad cel\u00edaca deben consumir alimentos sin gluten. Esto puede llevar a una disminuci\u00f3n en la ingesta de granos integrales y, por ende, de fibra, pero se puede compensar con otras fuentes de fibras como las frutas con c\u00e1scara y los vegetales\u201d.<\/p>\n<p><strong>Sin gluten, \u00bfsin problemas?<\/strong><\/p>\n<p>Valentina Fr\u00edas se\u00f1ala que \u201cel gluten no es un t\u00f3xico para todo el mundo, por lo que las personas que no tienen intolerancia al mismo pueden consumir alimentos con gluten\u201d. Destaca asimismo que los productos sin gluten no necesariamente son m\u00e1s saludables.<\/p>\n<p>La Sociedad Espa\u00f1ola de Diet\u00e9tica y Ciencias de la Alimentaci\u00f3n (SEDCA) recomienda que las personas no cel\u00edacas \u2013es decir, que no tengan enfermedad cel\u00edaca\u2013 que deseen eliminar el gluten de sus comidas primero deben consultar con su m\u00e9dico. Al quitar esta prote\u00edna de la dieta sin supervisi\u00f3n m\u00e9dica, tambi\u00e9n se puede privar al organismo de otros nutrientes, lo cual puede desembocar en un desequilibrio nutricional y otro tipo de deficiencias.<\/p>\n<p>Seg\u00fan un estudio de la Universidad de Harvard, publicado en 2017 por la Asociaci\u00f3n Americana del Coraz\u00f3n, quienes lleven una dieta sin gluten enfrentan un 13 % m\u00e1s de posibilidad de desarrollar diabetes tipo 2 que quienes ingieren alimentos con esta prote\u00edna.<\/p>\n<p>Otra investigaci\u00f3n que la Universidad de Harvard realiz\u00f3 en conjunto con la Universidad de Columbia, con un seguimiento de hasta 26 a\u00f1os, determin\u00f3 que suprimir el gluten sin justificaci\u00f3n ni guiatura m\u00e9dica puede incrementar el riesgo de padecer enfermedades cardiovasculares. En ambos estudios, lo que provocar\u00eda estos riesgos potenciales es la disminuci\u00f3n de los granos enteros de la dieta diaria.<\/p>\n<p><strong>No es un aliado para perder peso<\/strong><\/p>\n<p>La etiqueta \u201csin gluten\u201d no es sin\u00f3nimo de diet\u00e9tico. Es un mito que estos productos ayudan a perder peso, pues, de hecho, muchos contienen m\u00e1s calor\u00edas, az\u00facares y grasas que los alimentos con gluten.<\/p>\n<p><strong>A tener en cuenta\u2026<\/strong><br \/>\nDe acuerdo con los expertos, quienes se pueden beneficiar de una dieta sin gluten son:<\/p>\n<ul>\n<li>Las personas con alergias o intolerancia al gluten, o que padezcan de enfermedad cel\u00edaca<\/li>\n<li>Las personas con dermatitis herpetiforme<\/li>\n<li>Algunas personas que sufren de colon irritable, trastorno neurol\u00f3gico de ataxia por gluten, diabetes tipo
